French Lentil Salad

I have just a few go-to meals that I rotate regularly in my meal planning. Most of them includes French lentils. In the winter it’s a variation of lentil soup and in the summer it’s a variation of this salad. You cannot go wrong with French lentils.

Buy them in bulk, cook up a cup and toss them with your favorite greens, a bit of avocado and a some stone fruit and you have a hearty, yet refreshing summer meal. So healthy and delicious.

P.S. Don’t scrimp on the sunflower seeds. They add such a nice texture and flavor to the dish.

French Lentil Salad

1 cup Dry French (green) lentils
1 package arugula
1 nectarine
1 avocado
1 bag mixed fingerling potatoes
Feta cheese
Sunflower seeds
2 cloves garlic
olive oil
seasoned rice vinegar
Several sprigs rosemary
salt and pepper

Rinse lentils and soak in clean water for 10-20 minutes. Drain and rinse again. Cook lentils in boiling, salted water for about 20 minutes or until lentils are tender. Drain and toss with a bit of olive oil.

Pre-heat oven to 400 degrees. Quarter fingerling potatoes, toss with olive oil, salt, pepper, crushed garlic and rosemary. Spread on a baking sheet and roast for  25-30 minutes.

Create a nest of greens and sprinkle in all your goodies and some seasoned rice vinegar or your favorite vinegarette. Scoop a quarter cup of lentils in the center and top with feta cheese and sunflower seeds. Enjoy.

    This looks so good.. I have to admit, I don’t ever think I’ve cooked with lentils but I’m gonna give this a go.  For the past two weeks, I’ve done one meatless meal for the week.  I have loved it…hubby and kids not so sure about it but I think I’m going to keep it going! xo . trina
