Cheers to Your Health ~ Lemon Thyme Ice

Infusing chilled water with a hint of fruit, herbs or veggies is the easiest and healthiest way to flavor H20. There’s nothing wrong with some citrus slices floating in the pitcher, but I love the beauty of the fresh ingredients captured in an ice cube. They look like miniature works of still life filling up my glass.

This past weekend, I experimented with lemon slices and a handful of lime thyme from the garden. As well as a tray of blackberry and mint that I plan to set aside for a batch killer mojitos over the July Fourth weekend. And I’m thinking that cucumber and lemon would be a universally appreciated flavor combination for a party.

Lemon/Thyme/Agave Ice Cubes
Makes 1 Pitcher

1/2 Meyer lemon
Handful of Thyme (about a 1/3 cup)
Tablespoon Agave Syrup

Combine the ingredients in a cocktail shaker (or glass) and muddle well until lemons and herbs are broken and generally, for lack of a better word, “smushed” up. Evenly distribute contents into ice cube tray and fill with filtered water. Freeze and use as needed.
