Apricot Blueberry Galette

Summer means the return of stone fruit, friends! Be forewarned, this space will be littered with nectarines, plumes, plouts, apricots and peaches for the next few months. I’m an equal opportunity stone fruit lover. So there it is.

My go-to recipe for cooked fruit is Sherry Page’s galette. Last night, I threw together the dough with my 4 year-old and added apricots and blueberries fresh from the market. In truth, the apricots were a little tart, which made them ideal for being cooked down in a bit of sugar.

The galette is easy, delicious and a reliable crowd pleaser. It’s basically a rustic pie that anyone with a food processor can pull together. And that’s coming from someone who does not do pie crust.

    Breakfast, lunch, and dinner if you ask me. I discovered that, despite my love of peaches, I hate the fuzz peach skin. I guess I’ll just have to make those in to galettes.
